Stuffed Bell Peppers

Ingredients:
- 2 tbsp. of olive oil
- 1 medium onion, diced
- 3 cloves of garlic, minced
- 1 pound of lean ground beef
- 1 1/2 cup of cooked rice, brown or white
- 1 14.5 ounce can of diced tomatoes
- 1 tbsp. of tomato paste
- 1 tsp of dried oregano
- 1 tbsp. of paprika
- Salt and pepper, to taste
- 7 large bell pepper, any color
- 1 cup of shredded cheddar
- Parsley, for garnish
Directions:
1) Preheat oven to 375 degrees Fahrenheit. Cut top of bell peppers off and remove core. Then place bell peppers in baking dish.
2) Heat oil in a large pan on medium heat. Sauté onions until soft, and then stir in garlic and cook for 1 minute. Add beef and cook thoroughly, make sure you break up all the meat. Stir in rice, diced tomatoes, tomato paste, oregano, and paprika. Cook for about 4-5 minutes. Taste and season with salt and pepper as needed.
3) Stuff peppers with beef mixture and bake for 20-25 minutes or until peppers are soft. Take out the dish and add cheese on top of peppers, then cook for 5-7 minutes. Garnish with parsley and then serve. Enjoy!
