Dinner Rolls
Ingredients:
4 tsp of active dry yeast
1/2 cup of warm water
2 cups of milk, lukewarm
1/2 cup and 1 tsp of sugar, separated
3 tbsp. of melted unsalted butter
7-8 cups of all purpose flour
2 eggs
2 tsp salt
Directions:
1) In a mixing bowl, dissolve yeast in the 1/2 cup of warm water with 1 tsp of sugar. Once fully dissolved, mix in the milk, remaining sugar, and 1 1/2 cups of flour. Mix thoroughly then let it sit for 8-10 minutes.
2) Add the melted butter, eggs and salt. Mix extremely well. Then add enough flour to form a soft dough, that should be about 6 cups but you'll know when its enough. Once the dough is formed, place it on a floured surface and allow to rest for 10 minutes.
3) While dough is resting, prepare a large bowl with spraying it with cooking spray. Once dough is done resting, knead the dough until it is smooth. Place dough into the bowl and cover with plastic wrap and let it rise in a warm area for 1 - 1 1/2 hours.
4) Place dough on lightly floured surface and roll it out into a rectangle until it is 1/2 inch thick. Fold the rectangle in half (hamburger style if you want me to be more specific) and lightly roll together to seal the sides together. Allow to rest for 10 minutes.
5) With a dough scraper or a pizza cutter, cut the dough into strips then cut off into reasonable roll sized pieces (remember they will get bigger when you cook them) and then place on a greased baking sheet. cover with a damp towel and let them rise for about 45 minutes.
6) Preheat oven to 350 degrees and bake rolls for 10-15 minutes or until lightly browned. Brush tops with melted butter and serve!
