Sheet Pan Smoked Sausage with Veggies

Ingredients:

-2 cups of red potatoes (cut into small pieces to help cook faster)

-3/4 of a pound of fresh green beans (cut off ends and cut in half)

-1 large head of broccoli (cut into small pieces)

-2 bell peppers (cut into thick squares)

-9 ounces of smoked sausage link (cut into thick coin size slices)

-6 tbsp. of olive oil

-1/4 tsp of red pepper flakes

-1 tsp of paprika

-1/2 tsp of garlic powder

-1 tbsp. of dried oregano

-1 tbsp. of dried parsley

-1/4 tsp of salt

-1/4 tsp of pepper

-Grated parmesan (optional)


Directions:

1) Preheat oven to 400 degrees Fahrenheit. Line your sheet pan with foil or parchment paper.


2) Place all the veggies and sausage on the sheet. Pour the olive oil and all of the spices on top of the sausage and veggies, mix it together until they are evenly coated.


3) Bake for 15 minutes and then remove from the oven and stir everything around and put them back in the over to bake for 15-20 more minutes or until sausage is browned and veggies are crispy.


4) Top with grated parmesan , if desired. You can serve with rice or by itself, enjoy!
