Jambalaya recipe with Chicken, shrimp, and sausages

Ingredients:

- 1 tbsp. of olive oil

- 1 yellow onion, diced

- 2 celery ribs, diced

- 2 bell peppers (any color), diced

- Salt and pepper, to taste

- 3 cloves of garlic, minced

- 1 pound of skinless chicken breasts, cubed

- 1/4 tsp paprika

- 1 tsp of oregano

- 6 ounces Cajun andouille sausage, coined

- 2 tbsp. of tomato paste

- 2 cups of chicken broth

- 1 14.5 can of diced tomatoes

- 1 cup of long grain rice, cooked

- 1 tsp of Cajun seasoning, or to taste

- 1 pound of shrimp, peeled and deveined

- Dried parsley, for garnish


Directions:

1) In a large pot, heat olive oil on medium heat. Add onion, celery, and bell peppers. Season with salt and pepper. Cook for 4 minutes or until tender.


2) Add garlic and cook for 1 minute. Stir in chicken with paprika and oregano. Cook for 5 minutes or until chicken is browned on all sides.


3) Add sausage and tomato paste, cook for 1 minute. Add chicken broth, diced tomatoes, rice, and Cajun seasoning. Bring mixture to a boil then reduce heat to medium low and cover pot with lid. Cook for 20 minutes.


4) Add shrimp and cook for 4 to 5 minutes, or until shrimp is cooked through. Remove from heat and garnish with parsley. Serve and enjoy!
