Bacon Wrapped Mini Meatloaf
Ingredients:
- 1 medium onion, diced
- 1 tsp of garlic
- 1 tbsp. of butter
- 1 1/2 pounds of ground beef
- 1 large egg
- 1 cup of bread crumbs
- 1 cup of milk
- 1 tbsp. of Worcestershire sauce
- 1 tsp of thyme
- 6 slices of bacon
- 1/2 cup of ketchup
- 1 tbsp. of brown sugar
- 1 tbsp. of spicy brown mustard
Directions:
1) Preheat oven to 350 degrees Fahrenheit. Line your baking sheet with foil for an easy clean up!
2) Melt butter in a sauté pan over medium heat. Cook onions for about 3-5 minutes and then add garlic, cook for about 2-3 minutes then remove from heat.
3) In a large bowl combine beef, egg, bread crumbs, milk, Worcestershire sauce, thyme, and onion/garlic mixture. Pat out into 6 round equal sized portions. Wrap bacon slices around edge of disks, the ends of bacon should meet or slightly overlap.
4) In a separate bowl, combine ketchup, spicy mustard, and brown sugar. Spread over the tops of the meatloaves evenly.
5) Bake in oven for about 1 hour and 15 minutes or until bacon is golden. Enjoy!
