Asian Sweet Chili Chicken

Ingredients:

Batter for chicken

- 2 egg whites

- 1 cup of all purpose flour, sifted

- 1/2 cup cornstarch

- 1 tsp baking powder

- 1 cup of ice cold water

- 2 tbsp. of canola oil

- 1 pound of skinless chicken breasts, cut into 1 inch pieces


Sauce

- 2 tbsp. of canola oil

- 3 cloves of garlic, minced

- 1/2 cup of Thai chili sauce

- 1/2 tsp of crushed red pepper

- 3 green onions, thinly sliced


Directions:

1) In a medium pan, heat enough canola oil that when you are frying your chicken, it does not touch the bottom. Mix together batter ingredients in bowl and make sure chicken is fully covered. Place chicken in pan, you might have to break apart chicken once the crust starts to form and cook until golden brown.


2) Discard oil that you have fried the chicken in except for 2 tbsp. Add garlic and green onions, cook for 30 seconds. Then add chicken, Thai chili sauce, and crushed red pepper. Toss everything around until chicken is evenly coated. Serve and enjoy!
